Method

  1. Blend: Add the dates, oats, tahini, almond flour, cocoa powder, pumpkin seeds, walnuts, chia seeds, vanilla, cinnamon, orange zest and salt to a food processor.

  2. Process: Pulse until the mixture becomes sticky and holds together when pressed. If it is too dry, add water one teaspoon at a time.

  3. Add chocolate: Fold in the finely chopped dark chocolate, keeping a little texture rather than blending it completely.

  4. Shape: Divide the mixture into 12 portions and roll between your palms into compact balls.

  5. Chill: Refrigerate for at least 30 minutes to firm. Store in an airtight container in the refrigerator for up to 5 days.

Chef's Tip

Vegan option: Naturally vegan — simply make sure the dark chocolate is dairy-free. These little chocolate bites taste indulgent but are made from dates, tahini, nuts, seeds and cocoa. Orange zest adds an unexpected Mediterranean-style note, while tiny pieces of dark chocolate create a satisfying contrast against the soft, fudgy centre.
