Method

  1. In a large jar or airtight container, combine the chia seeds, vanilla protein powder, and your preferred sweetener.

  2. Add the milk, Skyr, and vanilla extract if using. Whisk thoroughly until the mixture is smooth and the chia seeds are evenly distributed.

  3. Let the mixture stand for 10 minutes, then stir again to break up any clumps of chia seeds. This helps create a perfectly smooth, creamy pudding.

  4. Peel and dice the mango into small cubes, or blend it into a silky purée for a smoother topping.

  5. Spoon the mango over the chia mixture, creating a colorful fruit layer.

  6. Cover the container and refrigerate for at least 4 hours, preferably overnight, until the pudding has thickened.

  7. Before serving, stir the pudding gently. If it has become too thick, mix in 20–30ml (1–2 tablespoons) of milk until you reach your desired consistency.

  8. Divide into two serving bowls or enjoy directly from the jars. Garnish with extra mango, toasted coconut, mint, or chopped pistachios if desired.

Chef's Tip

For the creamiest texture, use a ripe, sweet mango and blend half of it into a purée while leaving the remaining half diced for added texture. This pudding is ideal for meal prep and will keep well in the refrigerator for up to 3 days.
