Method

  1. Cook the egg to your preference. For a firmer texture, boil it for 8–9 minutes, then cool, peel, and slice. Alternatively, fry it in a non-stick skillet without oil for a runny yolk.

  2. In a small bowl, combine the drained tuna, Skyr (or Greek yogurt), mustard, salt, and black pepper. Mix until creamy and evenly combined.

  3. Toast the whole-grain bread in a toaster or on a dry skillet until lightly golden and crisp.

  4. Spread the tuna mixture evenly over both slices of toast.

  5. Arrange the cucumber slices on top of the tuna mixture.

  6. Finish with the sliced boiled egg or freshly cooked fried egg.

  7. Garnish with fresh dill, chives, paprika, or microgreens and serve immediately.

Chef's Tip

For even more flavor, add thin slices of avocado, tomato, red onion, or a squeeze of fresh lemon juice over the tuna. Capers and fresh dill also pair beautifully with the tuna, giving these toasts a fresh Mediterranean-inspired taste.
