High-Protein Spinach & Cheese Egg Roll

Method
Crack the eggs into a bowl and whisk until smooth. Season with salt, black pepper, and garlic powder.
Heat a large non-stick skillet over medium-low heat. Lightly coat with cooking spray if needed.
Pour the egg mixture into the skillet, tilting the pan to create a thin, even layer. Cover with a lid and cook for 3–4 minutes, or until the eggs are almost completely set.
Spread the light cream cheese evenly over the surface of the egg layer while it is still warm.
Scatter the fresh spinach over the cream cheese, followed by the grated reduced-fat cheese. Allow the spinach to soften from the residual heat for about 30–60 seconds.
Starting from one edge, carefully roll the egg into a tight log using a spatula.
Leave the roll seam-side down in the skillet for 30 seconds to help it hold its shape.
Slice into thick rounds or serve whole, garnished with fresh herbs and accompanied by sliced tomatoes or a crisp green salad.
For an elegant Mediterranean-inspired breakfast, add thin slices of smoked salmon or roasted peppers before rolling. The egg roll is also delicious served cold, making it a great meal-prep option for busy mornings or protein-rich lunches.
