High-Protein Egg & Cheese Breakfast Sandwich

Method
Whisk the eggs with a pinch of salt and freshly ground black pepper until smooth.
Heat a non-stick skillet over medium heat and pour in the eggs, cooking them like a thin omelet. Cook for 2–3 minutes, then carefully fold or flip if needed until fully cooked.
Spread a thin layer of mustard over one side of each slice of whole-grain bread.
Assemble the sandwich by layering one slice of bread with the omelet, reduced-fat cheese, lean ham, and sliced tomato. Add fresh spinach or arugula if desired, then top with the second slice of bread.
Place the sandwich back into the dry skillet over medium-low heat. Cook for 1–2 minutes per side, gently pressing with a spatula, until the bread is golden and crispy and the cheese has melted.
Slice the sandwich in half and serve immediately while warm and the cheese is perfectly melted.
For an even crispier sandwich, cook it in a panini press or sandwich grill. Add avocado, spinach, or roasted peppers for extra nutrients and Mediterranean flavor. Pair with fresh fruit or a side salad for a complete high-protein breakfast.
