Method

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

  2. Add the orange juice, lime or lemon juice, fresh cilantro or parsley, salt, and freshly ground black pepper.

  3. Blend until the mixture becomes smooth and creamy.

  4. If the sauce is thicker than desired, gradually blend in 1–2 tablespoons of cold water until it reaches a silky, pourable consistency.

  5. Taste and adjust the seasoning with additional citrus juice, salt, or pepper if needed.

  6. Transfer the sauce to a serving bowl and cover the surface with plastic wrap if not serving immediately to help minimize browning.

  7. Serve immediately with grilled salmon, shrimp, chicken, roasted vegetables, grain bowls, or as a healthy spread for wraps and sandwiches.

Chef's Tip

For the brightest flavor and color, prepare this sauce just before serving. The combination of orange and lime juice helps slow oxidation while adding a refreshing citrus note that pairs beautifully with seafood. For a little heat, blend in a pinch of red pepper flakes or a small slice of fresh jalapeño.
