Creamy Avocado Ricotta Dressing

Method
Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
Add the ricotta, fresh orange juice, garlic, mint leaves, salt, and freshly ground black pepper.
Blend on high speed until the mixture becomes completely smooth and creamy.
If the dressing is thicker than desired, add 1–2 tablespoons of cold water and blend again until silky and pourable.
Taste and adjust the seasoning with additional orange juice, salt, or pepper if needed.
Blend for another 10–15 seconds to create a light, velvety texture.
Serve immediately over seafood salads, grilled shrimp, crab, smoked salmon, or fresh mixed greens.
This creamy dressing is especially delicious with shrimp, scallops, smoked salmon, or lobster. The sweetness of fresh orange juice balances the richness of the avocado, while mint adds a refreshing finish. To keep the dressing bright green, serve it immediately after blending or cover the surface tightly with plastic wrap until ready to use.
