High-Protein Ham, Egg & Cheese Tortilla Fold

Method
Crack the eggs into a medium bowl and whisk until smooth.
Add the diced ham and halved cherry tomatoes. Season with salt, black pepper, and a pinch of garlic powder if desired. Mix until everything is evenly combined.
Heat a non-stick skillet over medium heat. Pour the egg mixture into the pan, spreading it into an even circle.
Immediately place the tortilla directly on top of the uncooked eggs and gently press it down so it adheres to the egg as it cooks.
Cook for about 2–3 minutes, or until the eggs are fully set on the bottom. Carefully flip the entire tortilla so the tortilla is now facing the pan. Turn off the heat—the residual warmth is enough to finish the recipe.
Sprinkle the grated cheese evenly over one half of the tortilla. Fold the tortilla in half to create a crispy stuffed pocket and let it rest for about 1 minute, allowing the cheese to melt completely.
Slice in half and serve immediately while the cheese is hot and perfectly melted.
Add a handful of fresh spinach or arugula just before folding for extra nutrients and freshness. A drizzle of hot sauce or a spoonful of Greek yogurt also makes a delicious finishing touch.
