Prepare the Base: Begin by placing the raw cashews and desiccated coconut into a food processor. Pulse until the mixture is finely ground but still retains a bit of texture for added crunch. Be sure not to over-process the cashews, as you want a crumbly, flour-like consistency rather than turning it into nut butter.
Add the Wet Ingredients: Next, add the almond butter, melted coconut oil, and maple syrup (or runny honey, if preferred) into the food processor. Blend the mixture until it comes together into a sticky dough-like consistency. Scrape down the sides of the processor occasionally to ensure everything is well incorporated.
Mix in the Chocolate: Once the base is fully combined, transfer the mixture into a bowl and stir in the sugar-free dark chocolate chips. This will add a delightful hint of sweetness and a rich chocolate flavour to the bars.
Press and Chill: Line a small baking dish with baking parchment. Press the mixture evenly into the dish, ensuring it's packed firmly. Place the dish in the refrigerator and let it chill for at least 1 hour, allowing the bars to set.
Serve: Once chilled, remove the dish from the refrigerator and carefully lift the baking parchment to take out the mixture. Slice it into 8 even bars. Store the bars in the refrigerator to maintain their firmness, and enjoy a healthy, delicious snack anytime!
