Ginger Soy Sauce

Method
Peel and finely grate the fresh ginger, then mince the garlic as finely as possible.
In a small bowl, whisk together the soy sauce, sesame oil, and water until well combined.
Stir in the grated ginger and minced garlic.
Let the sauce rest for 5 minutes so the flavors can infuse.
Taste and adjust the balance by adding a splash of water if you prefer a milder flavor.
Transfer to a serving bowl and garnish with thinly sliced green onions.
Serve as a dipping sauce, salad dressing, or marinade for tuna, salmon, chicken, shrimp, tofu, or stir-fried vegetables.
For extra depth, add a teaspoon of rice vinegar and a squeeze of fresh lime juice. If you're using the sauce as a marinade, allow seafood or chicken to marinate for 15–30 minutes to absorb the fresh ginger and garlic flavors without becoming overly salty.
