High-Protein Cottage Cheese & Egg Spread

Method
Place the eggs in a saucepan, cover with cold water, and bring to a boil. Cook for 9–10 minutes for hard-boiled eggs, then transfer them to an ice bath to cool before peeling.
Finely chop the peeled eggs or mash them with a fork, depending on whether you prefer a chunky or smoother texture.
In a medium bowl, combine the cottage cheese, chopped eggs, Dijon mustard, salt, and freshly ground black pepper.
Stir in the chopped fresh herbs until evenly distributed throughout the mixture.
Mix gently until all the ingredients are fully incorporated while maintaining some texture from the cottage cheese and eggs.
Taste and adjust the seasoning with additional mustard, salt, or pepper if desired.
Serve immediately spread over high-protein bread, whole-grain toast, or a protein wrap, or refrigerate in an airtight container until ready to enjoy.
For an extra creamy spread, pulse all the ingredients a few times in a food processor instead of mixing by hand. This versatile spread also works beautifully as a filling for wraps, stuffed tomatoes, or crisp lettuce cups, making it an easy high-protein option for meal prep.
