High-Protein Tomato Lentil Sauce

Method
Drain and rinse the canned lentils thoroughly under cold water, then allow them to drain well.
Add the lentils, tomato paste, vegetable broth (or water), garlic, smoked paprika, oregano, salt, and black pepper to a blender or food processor.
Blend until the mixture becomes completely smooth and creamy. If you prefer a thinner sauce, gradually add a little more broth until the desired consistency is reached.
Taste the sauce and adjust the seasoning with additional paprika, oregano, salt, or pepper if needed.
For a warm sauce, transfer the mixture to a small saucepan and heat gently over low heat for 2–3 minutes, stirring frequently. Avoid boiling to preserve the smooth texture.
If serving as a pasta sauce, toss with freshly cooked whole-grain pasta while warm.
Serve immediately over meatballs, grilled chicken, turkey, lean beef, roasted vegetables, or use as a nutritious dip or sandwich spread.
For a richer Mediterranean flavor, stir in a handful of freshly chopped basil or parsley after blending. If you'd like to transform this sauce into a creamy soup, simply whisk in an additional 250–350ml of warm vegetable broth and heat gently before serving.
